Chickpea “Omelet” / Savory Pancake

  1. To make the flax egg: add ground flax to water, stir and let sit for 3 minutes.
  2. In a bowl mix together all ingredients except spinach. Let stand for 5 minutes.
  3. You may need to add more water if the batter is too thick. You want a pancakelike consistency.Over medium heat, spray a ceramic pan. Once pan is hot, pour the batter in the center of the pan and thin it out.
  4. Cook on medium heat for 2-3 minutes until the edges become browned slightly. Flip it.
  5. Now add the spinach to one half of the omelet and cover to wilt the spinach.
  6. Then fold the omelet over in half and cook covered for a few more minutes. Enjoy!
