- Place quinoa in a fine sieve and rinse well. In a saucepan, cover quinoa with 2 cups water, bring to boil then simmer 15 minutes, covered on low heat.
- Next, add onion with 1 tablespoon water and steam for a minute or so. Add the garlic and ginger and stir until fragrant, about 2 minutes.
- Drain any unabsorbed water and cool while preparing rest of vegetables. .
- Mix diced avocado with lime juice before adding to salad. Toss all ingredients to mix well.
