- To make the flax egg: add ground flax to water, stir and let sit for 3 minutes.
- In a bowl mix together all ingredients except spinach. Let stand for 5 minutes.
- You may need to add more water if the batter is too thick. You want a pancakelike consistency.Over medium heat, spray a ceramic pan. Once pan is hot, pour the batter in the center of the pan and thin it out.
- Cook on medium heat for 2-3 minutes until the edges become browned slightly. Flip it.
- Now add the spinach to one half of the omelet and cover to wilt the spinach.
- Then fold the omelet over in half and cook covered for a few more minutes. Enjoy!
